The Daylesford Hotel has been a fixture of town life for generations—a place where history, hospitality, and community come together. In August 2024, local restaurateurs Liam Thornycroft, Samantha Mackley, Michael Chapman, and Daniel Condon—the team behind Cliffy’s Emporium and Beppe (now closed) — took over this beloved landmark, undertaking extensive renovations to redefine what a true country pub can be while respecting its rich heritage.

At the heart of this transformation is our brand-new formal dining space, The Bistro — a refined yet relaxed setting where classic dishes meet impeccable produce and warm country hospitality. With linen-draped tables, candlelight, and a carefully curated menu, The Bistro is perfect for those seeking a more intimate dining experience while still embracing the spirit of a country pub. Our public bar has also been thoughtfully updated, ensuring it remains the bustling social hub of Daylesford, pouring great local beers, quality wines, community raffles and classic cocktails to locals and visitors alike.

Meanwhile, we’re gearing up to introduce Bar Bamford, an intimate cocktail space that will offer dimly lit charm, plush interiors, and a roaring open fire — a cozy retreat for an after-dinner drink or a late-night soirée. With its own dedicated bar, elegant textiles, and a touch of old-world sophistication, Bar Bamford is set to become the hidden gem of the hotel.

The kitchen is led by renowned Head Chef Rob Kabboord, whose impressive career includes Merricote in Northcote and Quay in Sydney. His produce-driven menu honours the pub’s heritage, featuring a really great schnitzel, a seasonal pie, traditional Dutch bitterballen, and a weekly-changing selection of refined seasonal dishes available exclusively in The Bistro.

Upstairs, our accommodation has been carefully restored, offering comfortable and beautifully simple pub-style rooms for those wanting to experience the warmth of old-school country hospitality. Guests can wake up to fresh country air, explore Daylesford’s vibrant food and wine scene, and return to the hotel for a drink on the balcony at sunset.
