Born in Cluny, Burgundy.

Third generation of a family involved in the wine trade in Burgundy,  after studying oenology in Dijon, went into exploring the wine world. Bourgogne, Languedoc, Australia, Medoc, Chili, Tuscany, Beaujolais, Campania. Exploring the world of taste , Gilles was part of the Institut Francais du Gout, developing a program of taste education in the French school system, which extended into the creation of Sensass, exploring sensorial experiences in diverse sectors. (chocolate, beef, cheese, wine competition, health...).

In 2001 , Gilles moved to Australia to manage and develop Sutton Grange winery near Castlemaine, Central Victoria. In 2002, conversion of the viticulture to organic and biodynamic, 2003, release of the first wines under the Fairbank label. 2005 release of the first wines under the Sutton Grange Estate label. The wine is now sold all over Australia and is exported to Europe, Canada, New York, China, Daylesford.

In 2011 , first research on vermouth leading to the creation in 2012 with Shaun Byrne of MAiDENii, first vermouth with Australian botanicals.
